Charlie is off recording with his band this weekend, so I'm roughing it alone. You know what that means? Lazy vegan meals. This is a variation of the other mac 'n' cheese I make, this one using less pasta and a lot more greens. It also includes a sliced up Field Roast sausage; smoked apple sage blows my mind. So good.
Tasty, and so so easy. Daiya is the greatest.
